Super Hummus Alert!

So, I’ve been bragging on the Super Hummus from Nasoya, and now it looks like they’re going to discontinue the product.


I need hummus for my 7 Layer Sandwich, and I don’t need to be spending a lot of WW points or calories on the hummus.

Earn It Before You Eat It

I really enjoy indulgences. Things like cake, wine, yummy restaurant entrees are not-to-be-missed treats in life. And now that I’m an active person, I can safely say that I have earned them.


Except when I haven’t.

See, the trouble all starts when I have a planned activity (like running). Safe in the knowledge that I’ll be covering some miles and burning some calories, I enjoy a glass of wine (or two), a rich dessert (and entrée) or a yummy Belgian waffle (with syrup and butter).

I Get Naked on Monument Avenue

Yep, me, Dexter, my son, my husband, five of our training team coaches, one of my gym buddies, one of our run group buddies and 39,989 of our other friends went out this weekend for a beautiful run, jog, wog, walk, dance or stroll down Monument Avenue. The weather was fantastic, the sun was out, spring was in the air.

And when time came for a costume change, it happened right there on the cobblestones.

Catching Up

Did you miss us? We’ve missed you! While we’ve been away we’ve certainly been learning loads and have lots to share.

First and foremost, check out the goal counter at right. See that? Dexter is now at 85% of his goal… just 15 pounds away from 100 pounds and Lifetime Membership at Weight Watchers. WOW!

Also, I’ve been playing in the kitchen and have discovered some new recipes to that you might enjoy – my family and I have deemed them quite worthy of repeat appearances.

And Dexter and I have both leapt back into Training Team with Coach Mandy and the Sportsbackers, this time getting ready for Richmond’s biggest street party: the Monument Avenue 10k.

The Facts About Fat

“Daddy, you know you didn’t gain two pounds of fat from dinner last night, right?”

My father and I have had this conversation many times. I’d raise my eyebrow and try not to be too condescending when I said it. I’m pretty sure I failed.

“Well, I don’t know,” my Dad would say sagely. “The scale said I weighed two pounds more today than I did yesterday.”

I’m going to admit a truth to you. I like to be right. So I grabbed a Groupon and got both me and my Dad one of these

That’s Cauliflower?!?!?!?

The focus of our Weight Watchers meeting this month is to incorporate more fruits and vegetables into our day. I’m a big fan of this tactic. Fruits and vegetables help me expand my meal sizes without expanding my waistline.

I’m a hungry girl, y’all. I need A LOT of food.

One of my favorite wintertime vegetable treats is roasted cauliflower mash. This stuff is so good that I swear to you, you’ll eat a huge bowl of it and go looking for more.

Best news? In addition to being super yummy (honest, no joke – Dexter will vouch for this and he’s really had to learn to like vegetables) — It’s also completely guilt-free!


The Recipe

1 to 2 bags of frozen cauliflower. Store brand is just fine. (0 PP)

Olive oil sprayer (1 PP)

Kosher salt to taste (0 PP)

Laughing Cow Cheese – Light Original (1 to 2 wedges per bag of cauliflower)  (1PP for 2 wedges)

Roasted garlic – 1 to 3 cloves, depending on preference (optional) (0 PP)

CauliflowerPreheat oven to 400 degrees. Line baking sheet with tin foil and spray lightly with olive oil. Put frozen cauliflower on baking sheet (try to avoid having the florets “crowd” each other). Spray cauliflower lightly with olive oil. Sprinkle on kosher salt. Bake for 45 minutes or until cauliflower is golden brown. (See picture) Yes, I know it looks a bit burned, but trust me, that’s how far you want to take it. Be brave. It’s worth the wait.

If you don’t have roasted garlic, you can get some ready while the cauliflower is going. Just wrap a head or two in aluminum foil and toss them in the oven for the same amount of time as the cauliflower. It’ll come out just right and ready to go.

Once the cauliflower (and the garlic) are cooked, dump it into a large bowl. Add the cheese and roasted garlic (squeeze the garlic out of it’s clove pod like toothpaste). Using your immersion blender, blend together until you have smooth, creamy goodness.

I roast up to 6 bags of cauliflower on the weekend, prep the blended version, then package it in the fridge for easy side dishes with dinner during the week.

Voila! Gourmet yumminess that is super easy, pretty cheap and will satisfy you with its hearty goodness.
